Mary Nikols Obituary

Our beloved wife, mother and grandmother Mary P. Nikols passed away on Christmas Eve 2011. Mary was born February 1, 1938 in Crete, Greece to Emmanuel and Caliope Pappis (Litinakis). At the age of twelve, she and her family immigrated to the United States residing in Salt Lake City, Utah. There she met her beloved husband John Nikols and were married for 54 wonderful years.
Mary and John have owned and operated the Coachman's Dinner and Pancake House Restaurant for many years. Mary supported and worked alongside her husband during that time. She always greeted customers with a smile and made them feel welcomed and appreciated. While being very supportive of her husband and the business, Mary always made her children and home the priority in her life. Mary was very involved in the Greek Orthodox Church when she was well. She was honored to have been President of the Daughters of Minos, a Cretan women's organization from 1984 -1986.
Mary was a loving mother and grandmother to her four children and seven grandchildren. She was an incredible wife and a dear sister to her family. She will always be in our hearts and will be greatly missed. Mary is survived by her husband John N Nikols; her sister Artemis Xenakis (Ted); her children Nick J. Nikols (Denise), Diana J. Nicholas (James), Michael J. Nikols, Matthew J. Nikols; and grandchildren Anthony J. Nicholas, John J. Nicholas, Christopher J. Nicholas, James A. Nicholas, Jr., Ariana M Nicholas, Mary C. Nikols and John J. Nikols.
There will be a viewing at Wasatch Lawn Mortuary (3401 Highland Dr.) on Wednesday, December 28, 2011 from 6-8 p.m. with a trisagion/prayer service starting at 7:30 p.m. Funeral services will take place at Holy Trinity Greek Orthodox Cathedral (279 S. 300 W.) on Thursday, December 29, 2011 at 11 a.m. Interment at Mt. Olivet Cemetery.

Our family has been coming to the coachman's for years every since my dad stumbled up on a fellow greek man that gave him a chance! Mary was such a kind and generous woman. She always wanted to see our children and placed her hands on their cheeks, and wanted hugs from them. She had such a sweetness and loving way about her, and she always made us laugh! We love you Mary and will very much miss you. Our hearts are with you John, Nick, Mike, Diana, Matt, James, and Denise, all your beautiful grandchildren.

I have many fond memories of dining at Coachman's... and lightheartedly teasing Mary. What a good, and caring person. May you all find peace during this most difficult time. Losing one's mother is a tough transition to go through. But remember that the sun continues to rise in the east bringing forth a new day. Gary Grubb
