For Lisa's Norwegian family, Thanksgiving isn't complete without lefse, the soft flatbread that can be made with or without potatoes. Lisa's mom, Norma, remembers, "My mother [Emma] rolled out the dough into a big circle and laid it on the top of her wood burning cook stove. She had a long stick she used to turn it over. It was like a giant tortilla!"

Ingredients

  • 2 cups cream
  • 2 cups milk
  • 1/2 cup butter or lard
  • 2 teaspoons sugar
  • 4 cups flour
  • Salt

 

To Prepare

Cook cream, milk, butter, and sugar in a saucepan for 5 minutes. Pour the boiling liquid over flour and mix well to make a very stiff dough. Let cool. Roll out in thin sheets on a table or baking board with a greased rolling pin. Cook on top of the stove, using medium heat. Turn with a long, flat stick to bake on both sides. When done, cover well with cloths to keep soft.
