EUSTOLIA PEREZ EDINBURG - Eustolia Perez, 79, passed away on December 27, 2012, at The Bridges Assisted Living in Mission. Eustolia was a resident of Edinburg, Texas, she was born in May 6, 1933, in San Jose Ranch, TX. She was preceded in death by her parents, Basilio and Magdalena Casas Perez and is survived by her siblings, Alvessa Perez, Ismael Perez, Antonio Perez, Basilio Perez and Isidro Perez. Eustolia graduated from Edinburg High School and Pan American University where she obtained a Bachelors of Art in Education and a Masters degree in Education. She also obtained a Doctorate of Philosophy in Education from Clayton University, Clayton, Missouri. Eustolia was a public school teacher and supervisor in McAllen Public Schools. She was a professor of Education at the University of Texas Pan American in Edinburg, Texas. The highlight of Eustolia's professional career was working for the Department of Education of Ecuador for seven years as coordinator of teacher training and curriculum development in Quito, Ecuador. She also was active in recruiting teachers from the Philippines to work in American schools in the South Texas region. Eustolia was a devout Catholic and attended Sacred Heart Catholic Church of Edinburg, Texas. She was an active member of Pan American Round Table and a strong supporter and advocate of the Foundation for Ichthyosis and Related Skin Types (FIRST). Visitation will be from 6 to 9 p.m., with a 7 p.m. rosary today, December 30, 2012, at Memorial Funeral Home, 208 E. Canton in Edinburg. Funeral service will be at 10 a.m. Monday, December 31, 2012, at Sacred Heart Catholic Church in Edinburg.
