She was predeceased by her sister Aase (1958), her parents Aage Mikkelsen and Else (nee Kristiansen) and brothers Marthinus and Carl Anker (Olive) of Denmark. She is survived by her loving husband, Gunnar Jensen, son Tonny (Birthe) of Leader, Saskatchewan, daughter Jo-Ann (Gordon) Kornfeld of Lagos, Nigeria, and four grandchildren, Karsten, Jennifer, Paul and Benjamin. She also leaves behind her brother Villy (Poula), sister-in-law Lisse of Denmark, and brother Bent of Norway. Esther was born on December 24, 1925 in Thorning, Denmark on the Papsøgaard farm. She grew up on a small farm in the Vinkel area. When she was a young woman, she met Jesus in her home and desired to be a godly wife and mother. She married Gunnar Jensen, oldest son of Niels and Kristian Jensen, on October 30, 1949 in Denmark, near Viborg. In 1953, they immigrated to Canada, settling first in Tilley, then moving to Calgary. They moved to Nanton, Alberta and owned a family bakeshop for five years and then returned to Calgary. Esther enjoyed caring for her own children and also others with baby-sitting and cleaning homes. She was noted for her fine cooking and baking, specializing in Danish pastries. She was also skilled at embroidery, producing many tapestries and wall hangings. She always had a sweet, patient and giving spirit that will be missed by all. Her final years were marked by Alzheimer's Disease.
