Ephraim, UT-Doris Elaine Nielson Larsen lived her life surrounded by the love of her family. She left this world on May 16, 2013, and joined her beloved husband MaCoy M Larsen, whom she has missed these many years. There was indeed, a joyous reunion in Heaven this day. Doris was born March 22, 1923 in Ephraim, Utah to Ernest Hyrum Nielson and Castella Bertlesen Nielson. She married her sweetheart MaCoy M Larsen in Ephraim Utah. They were later sealed in the Manti Temple for all eternity. Together they raised two sons. Doris was a gifted writer. She penned the words to the Snow College School song, and was a published poet. She wrote poems for everyone and everything, it was one of her great passions. She was a romantic, she loved the classics, both literature and the big screen. She loved the beauty of the change of seasons, and looked forward to the adventures of each new season. Doris was a friend to all and was loved by many. She loved, inspired, and brought joy to the lives of others, by sharing her love and talents. Doris worked at Snow College in Ephraim, Utah for many years. She loved the job and she loved the people. She was the personal secretary to five presidents and two interim presidents. She cherished the time she spent at Snow College, and the friendships formed there. Doris was a devoted member of The Church of Jesus Christ of Latter-day Saints and served in many positions. She was Young Women's Mutual President, a Cub Scout Den Mother, and loved writing letters to the missionaries, and she and her husband served a mission at the Manti LDS Temple. Doris was proud of her family, her Danish Heritage, being a life long resident of Ephraim, Snow College, and being a card-carrying member of the Democratic Party. Doris is survived by her son, Vance Ernest Larsen (Lorna), and daughter-in-law, Sheron Mellor Larsen, sister Shirley Kilgore (Earl), 12 grandchildren, 21 great-grandchildren, and numerous nieces and nephews. She was proceeded in death by her husband MaCoy M Larsen , son, Craig MaCoy Larsen, and infant son, Dane, her brother Vertis Roy Nielson (LaRue), Sisters, Veone Hunter (Earl), and Afton Christensen (Dean). Funeral services will be held Tuesday, May 21, 2013, 12:00 noon at the Ephraim LDS Sixth Ward Chapel, 751 South 100 East. Friends and family may call from 10:00 to 11:30 A.M. prior to the services. Craig and Kelly Hinckley

To the Larsen Family, My name is Craig Hinckley, son of Bryce and Janet Hinckley.What a GREAT LADY ! I am sorry for her passing. My wife Kelly and I took my mother Janet on her last road trip to Ephraim to Doris's house. What an awesome and fun time we had. It was three years ago this Memorial weekend. I remember McCoy and Doris when I attended Snow College years ago and the fine leaders they were. These memories of them I will always have. Our prayers and thoughts are with her family.

Aunt Doris was always there for nieces and nephews. I remember well the root beer she used to make, stored in the basement to keep it cool, and our delight when we heard the swoosh when it was opened.........it may have been a littler "hard" but it sure was good. She was definitely one of our favorite aunts and it was obvious that she loved us. She is already much missed.
