Catherine Bernice "Bunny" Eckholdt
Bunny Ryan was born in Jackson, NE on February 18, 1919 and raised on the family farm along with her six siblings. She moved to Denver, CO, where she met her future husband, Grant Eckholdt. They were married in Livermore, CA in 1939. They relocated to Long Beach in 1942, where they settled permanently and raised seven children. Bunny, along with Grant, were founding members of St. Joseph Catholic Church, in Long Beach. Bunny was active in The Legion of Mary and the Altar Society and provided lunches to the homeless for many, many years. Bunny was known for her unconditional love, limitless passion for helping, chocolate chip cookies and endless energy. One of her nicknames was the "Energizer Bunny". The Eckholdt family would like to thank St. Therese Residential Care in Cypress for their care and genuine love for Bunny, during her final year. Bunny was predeceased by her husband of 36 years, Grant Eckholdt, one brother and four sisters. Bunny is survived by her seven children, Kurt Eckholdt, Karen (Frank) Pickett, Kerry (Marty) Dusserre, Kim Eckholdt, Kent Eckholdt, Kelly Eckholdt and Kevin (Maureen) Eckholdt. She leaves 10 grandchildren and 10 great-grandchildren. She is also survived by a sister, Shirley Gushurst of Greeley, CO. Bunny is loved by many nieces, nephews and friends.Rosary will be held at 6:30 P.M. at St. Joseph Catholic Church on Friday, May 3, 2013, followed by a viewing/visitation. Funeral Mass will be held at St. Joseph at 10:00 A.M. on Saturday, May 4, 2013 followed by internment at All Souls Cemetery in Long Beach. Please sign the guest book at www.presstelegram.com/obits.
