CAROL SIMONTACCHI Obituary

Carol Simontacchi

November 15, 2011

Carol Simontacchi went to be with the Lord on November 15, 2011. She was a wonderful mother to four daughters, and a Nanna to two granddaughters and two grandsons. She was the owner of Island Nutrition Center on Sanibel, and contributed greatly to her community with her love of nutrition and her dedication to serving the Lord. She also served in her church, Safe Harbor Community Church, playing the piano, singing, and helping with the children. She is greatly missed, but is at peace in her body, no longer experiencing the suffering of the disease that took her, and she is at peace in her spirit, enjoying her home with the Lord, in a body that cannot die. A memorial service will be held at 2 PM on Sunday, December 4, 2011 at Safe Harbor Community Church, 12960 Plantation Rd., Ft. Myers, FL 33966.

I wanted to invite Carol to speak at an event in Dallas. I was shocked and saddened to hear of her passing. We have been friends for years in professional organizations, even sharing a room at conferences. She had a powerful message and was a blessing to all who knew her. I will miss her greatly.

I didn't know Carol personally but I did attend her nutritional lectures and have gotten one of her books. I was very inspired by her and will continue to be. My deepest sympathies to her family.

I was deeply saddened today when one of Carol's daughters called to let our office know that Carol had passed away. Carol presented with AFPA at many of our fitness conferences over the years, and we had collaborated on several nutritional education programs. Carol was a member of our advisory board. Carol was always the consummate professional, and brought great joy and information to the attendee's she spoke to for AFPA.

Her many books were wonderful and reached many individuals. My favorite was "The Crazy Makers".

Carol left us much to early. The only reason I can think of why is because the good Lord need her more by his side.

I [we] can do all things through Christ who strengthens me. [Philippians's 4:13].

God Bless Carol's family.
