I worked with Chef Heinz in the 80's at Rickeys' Hyatt in Palo Alto. I was in the Purchasing/Shipping -Receiving Dept. I learned so much from him about how to examine cuts of meat so when I was signing for the deliveries, I would know how good the cuts were. I also learned about how to rotate foods. What a great man. I was just telling my son's about him. I'm so sad to hear of your loss.
