Eileen graduated from St. Bernard High School in 1968. Upon graduation, she attended Fredrick & Charles Beauty College. Then began working at Daly's. For 17 years, she worked at South Bay School as the head cook, and was very involved with the students and faculty. Eileen was loved by everyone and never let a child go hungry. In addition, she enjoyed running the family ranch with her husband. Eileen was an extremely devoted wife, daughter, mother, grandma, sister, auntie and friend; she loved her family more than anything else in the world and was the center of every family gathering. She cherished her grandchildren and enjoyed spending time with them; she never missed a single sporting or school event. She was a woman who would open up her heart and treat you as if you were one of her own without a second thought; often giving far more than one could ever hope to receive just because she cared. "Auntie I" will never be forgotten and will be missed more than words can express.
