Monk, Carol Carol Stacey Monk, 86, a longtime resident of Altamonte Springs, died Wednesday, November 8, 2017. Born in Montgomery, AL January 30, 1931 to William F. Stacey and Alma Stacey, she was a proud graduate of University of Alabama.. She was married to Donald J. Monk, Sr. for 57 years. After residing in Lansdowne, PA they moved to Altamonte Springs in 1970. She taught for a number of years at Open Air in Winter Park until it closed, after which she was a teacher at First Congregational Church Preschool & Kindergarten until her retirement. Survivors include husband Don, daughter Carol Landis (David) of Orlando, son Donald J. Monk, Jr. of Athens, GA and grandchildren Cullen Landis and Margaret Grace Monk, as well as dear friends Karen Sinclair and Mary Ellen Rodriguez. She treasured spending time with her family, especially her grandchildren, and cheering for the Crimson Tide.. During football season she began each Saturday with College GameDay followed by the weekly televised gridiron battles. She was a true fan of all sports and had an encyclopedic knowledge of sports history and statistics. Her southern heritage was evidenced by her cooking skills which often featured a healthy dose of butter, her most prized condiment. Friends are invited to a memorial service at 10:00 a.m. Friday, November 10, 2017 at First Congregational Church of Winter Park, 225 S. Interlachen Ave. Winter Park FL 32789.
