Henry G. Franz Obituary
"Hank" Passed Away May 4, 2010 Born and raised in Eagan, MN. Held various executive chef positions at different hotels and restaurants throughout his life. A position that brought him much joy, happiness, and fulfillment was as the Executive chef of the Acapulco Princess in Acapulco Mexico. He returned to the Twin Cities in the late 70's and was instrumental in the success of the original ChiChi's restaurant. He used his talent, expertise and recipes to create the unique components that contributed to making ChiChi's a successful national franchise. He continued his success with the Ole Mexico chain in St. Paul. After retiring officially from the restaurant business but never entirely, he was always revered at family gatherings for his famous BBQ. In 1993 he joined his son Todd in his auto business South Metro Auto Brokers in Rosemount and remained a valuable partner in this venture until stricken with the devastating disease of Dementia Lewey Bodies in 2004. He fought a courageous battle for six years. Family would like to give special recognition and thanks to the phenomenal care provided by the staff at Centennial House of Apple Valley, where he resided for the past year. The loving care that was provided gave much peace and consolation to family members near and far. The last four days of his life were spent at the Lodge in Burnsville, where again he received such wonderful care and compassion. Preceded in death by parents, Henry and Louise Franz.
