Surely missed for all time. Never worked with a better man and/or chef.Always kept you laughing, but was there when you needed him. I've often wondered about him. Surely, surely missed. Work with him in Houston at the Inn on Post Oak Park.

Deeply shocked and saddened.
Going through archives, I found many memos from/to Chef Makin.
I discovered his passing while attempting to reconnect with an ol pal.
I worked with Chef John at The Remington Hotel- Houston, Tx in the mid 80's.
We also had attended CIA at the same time.
I never forgot John's excellence and creativity, as a chef, administrator, instructor, confidant, and a compassionate, caring human being.
I can hear his personable laughter as I write this.
I am so sorry for all who have lost John so prematurely.
He still had a lifetime more of splendor to share
Peace-from my heart,

All chefs are cooks, but not all cooks are chefs. Among the thousands I have worked with - including Meisters, Masters, and Meilleur Ouvrier, - I can count on less than two hands those who truly knew how to cook. Of them ..... John was the best. He was a Chefs Chef. He possessed what the rest of us wish we had.

John, Words are not sufficient to relate how you influenced my life. You were a light in the world, a light unto my path. You did more than look. You could see. You had the eye to see, and the desire to see, and possessed an extraordinary capacity to observe. To be able to see, not merely look, is the foundation of all discovery.
Heaven is no faraway place. The body inhabits the soul. It took eyes for the universe to see what it looked like, ears to hear what it sounds like. The universe created each of us so that it could be conscious of itself in a way that had never appeared before.
We are all expressions of eternity and of this very second both at once. And I am fortunate to have encountered your unique expression, your profound and singular manifestation of Creation during my time on this earth.
You have not passed John, you are with us all, we exist within you now, having returned to Creation - that which was never born ..... and will never die.

John was a rare man in this world, and the world is lesser for his passing, yet richer for his life.

Went to the bakery this morning to pick up some bread. Have been traveling a lot lately. Asked to see Maria, she was not in, asked to see John. Then Alan told us what happened. I had no words to speak , hard for me not to have something to say. I'm Italian. Rest in peace my friend Even Heaven needs great Chefs.
