I loved walking into Bouley in TriBeCa and smelling the apples, particularly on a cold day. It was my favorite restaurant in the world! May David´s family and friends be comforted by our Lord Jesus. David´s memory is secure.

We held our wedding at Bouley in 2009. It may be the only wedding in history where to this day everyone remembers the food, the ambience and a freak early winter snowstorm. David was charming and gracious. We celebrated our anniversary there every year until it closed. A big loss.

I went to grammar school with David at St. Mary´s in Willimantic, CT. I remember his curly hair and how funny he was! I followed his career and amazed by how renowned he became. So sad he is gone so soon. But he gave so much during his time through his talents. A life well-lived. Rest in peace.

In 1988 I walked into the original Bouley in Tribeca. I knew the area well as a friend had a painting studio there for many years. I had read about David in magazine and thought to myself I´m going to walk in and give them my resume. I felt confident to work in a gourmet restaurant with all my previous experience. When I arrived, I was greeted by Melissa . As I reached in my bag for my resume, she proclaimed, " you´re hired!" Melissa needed someone to do her job 5 shifts a week. That began my journey working front of the house for David Bouley sine he couldn´t be in both places at the same time! David was in the kitchen personally supervising every order. As a creative person myself with a BFA from an art college, I knew David was a truly talented artist.
I deeply respected David and saw him as a genius chef/artist, creating beautifully designed plates with luscious aromas, beautiful presentations, and exacting care- only accepting perfection.
One night in the middle of rush hour service, David called me into the kitchen to talk about a raw scallop he was about to cook and how he was about to cook it. He spoke with such passion that all these years later it remains an unforgettable experience. It was important to David even when we were over-booked on a Saturday night and his clients had to wait, that I didn´t lose a single client! At times that was challenging!! I did my job well, sometimes navigating frustrated clients had to wait, that I didn´t lose a single client! At times that was challenging! I did my job well, sometimes navigating frustrated clients in the lounge by running into the kitchen and enlisting David to make some complimentary hot d´oeuvres or a free cocktail! David put Tribeca on the map... he really did!
A few fond memories of my time with David. Very sad he left so young.
Thank you, David for having me be part of your chef star rating those many years ago.
To his family and dear friends, I´m sorry for your loss.
Warmly,
Susan Beckhard

David´s gifts to us were his restaurants they were filled with beauty in every sense you could imagine. So much joy was shared with our families and friends here. The smell of apples at arrival, the vineyards on the walls, the spectacular decor, with his gorgeous flower arrangements everywhere. There were feasts of flavors delicately prepared and presented like no other could!! Every time we left we looked forward to our return. He was a rare and wonderful talent with such special gifts. We felt each experience was like visiting a relative´s home filled with so much love! A life of pleasing palettes and touching one's souls. You left a legacy most of us will NEVER forget! RIP.
