Betty June Parrott Minnis, age 93, died peacefully on August 6, 2024, in Knoxville, Tennessee.
Betty was born on October 30, 1930, in Soddy-Daisy, Tennessee to James Thomas Parrott and Beulah Childs Parrott. She graduated from Soddy Daisy High School where she was selected as "Miss Soddy Daisy."
Following her graduation, Betty married Earl Minnis, and they began their life together in Chattanooga, Tennessee. After the births of their two children, Betty worked tirelessly volunteering in the schools, community, and at Brainerd United Methodist Church. She was a talented seamstress, and she enjoyed knitting, bridge, garden club, and family trips to the beach.
Following her husband's death in 1982, Betty moved to Knoxville to be near her family. As her grandchildren and great-grandchildren came along, she loved being "Bibi", and her greatest joys were participating in their lives as a fun, loving, and nurturing grandmother and great-grandmother. Bibi created a special bond with each child, and their love, in return, was one of her life's true blessings.
A lifelong Methodist, Betty continued to grow in faith in her later years as a member of Concord United Methodist Church. Her Christian values and faith in God guided her along life's journey.
Betty was preceded in death by her husband of 34 years, Earl Minnis, her parents, her brother, Eugene Henderson Parrott, her nephews, Gary Parrott and Eugene (Pete) Parrott, Jr., her sister-in-law, Vivian Davis Parrott.
She is survived by her loving children and their spouses: Bettina (Betsy) Minnis Priest, and husband, Timothy, Stephen (Steve) Earl Minnis, and wife Mary; Adored grandchildren: Adam McCall Priest, Laura Priest Morris and husband, Warren, Anna Minnis Iacofano and husband, Kevin, Alexandra Minnis Hegge and husband, Thomas; Beloved great-grandchildren: Katherine and Anna Priest, Thomas and Laura Leigh Morris, Clara and Alice Iacofano, Frederick and Conrad Hegge; Devoted brothers and sisters-in-law: Paul Edwin Parrott, and wife, Suzanne, Sidney Thomas Parrott; Many loved nieces and nephews.
A celebration of life will be held at Concord United Methodist Church on August 24, 2024 at 5:00 pm with receiving of friends following the service. Burial will be at the Chattanooga National Cemetery at a later date. In lieu of flowers, the family requests donations be made to Concord United Methodist Church Building Fund, 11020 Roane Dr. Knoxville, TN 37934.
The family would like to thank the staff and caregivers at The Lantern at Morning Pointe of Knoxville for their loving care of Betty during her last months of life.
