Carol J. Anderson, 85 of Jefferson, passed away on Sunday, February 22, 2026, at Lake Mills Heath Services.

Carol was born on August 1, 1940, in Independence, IA, the daughter of William and Elizabeth (Mundt) Birkholz. She graduated from Jefferson High School in 1958 and married Carl Anderson on September 26, 1974, at St. Mark's Lutheran Church in Jefferson. Carol worked for Jefferson Meat's and retired in 1984 and went on to work as an EMT in the city of Jefferson. She also was a Deputy Coroner, and Deputy Medical Examiner for Jefferson County. On Saturday nights, Carol could be found working the Pit Gate at Jefferson Speedway. Carol loved all things Disney and had a special place for Mickey Mouse. Travel has always been a passion of Carol's, and her beloved dogs were cared for well. Going out to eat, especially going to the Fireside, with family were always times cherished. Carol was a devoted wife, mother, sister, and friend to all. She was loved by people near and far, and her legacy lives on through her family and friends. She will be dearly missed.

She is survived by: her husband Carl Anderson of Jefferson; children Cindy Witucki of Jefferson, Jeff (Stephanie) Anderson of Chickamauga, GA, and Paul (Nora) Zwieg of Spring Grove, IL; grandchildren Shelley, Jim (Melinda), Sarah, Andrew, Josie (Gavyn), and Jack; 9 great-grandchildren, and 1 great, great-grandchild on the way; sister Barbara Birkholz; and niece Ashley Christensen. Carol is also survived by other family members and many friends.

She is preceded in death by her parents and sister Mary Jo.

An open-house, celebrating Carol's life will take place on Thursday, February 26, 2026, at the Olsen-Gibson Funeral Home from 4:30PM – 7:00PM.
