Elizabeth Rubio was one of the most generous, genuine, and kind souls to grace this world. She had a heart for serving others and found her greatest joy in bringing people together-most often around the table she so lovingly prepared.
A talented cook and baker, Elizabeth took great pride in her craft. Her kitchen was a place of comfort, laughter, and love, and her legendary tres leches cake was a family favorite that will never be forgotten. Sundays were her most cherished days, when she gathered with family for lunches filled with good food and even greater love.
Elizabeth's faith in God was unshakable, a guiding light that carried her through every season of life-even until the very end. Her warmth, generosity, and unwavering spirit will continue to inspire all who were blessed to know her.
Elizabeth is lovingly remembered by her husband of forty-one years: Job, her children: Laura (Juan), Luis, Jacob (Madison), her grandson: Gael, granddaughters: Jazmyne and Chelsea, a bonus great-grandson Mason, her mother: Olympia, her siblings: Enrique (Irma), Guadalupe (Gustavo), Vidal Jr (Rosa Emma), Alfredo (Patricia), Leonel (April), many nieces, nephews and people that loved her.
