Emma was born in La Rosita, Coahuila, Mexico to Eulalio & Maria Dolores Rodriguez on April 26, 1945. She married Merced O. Rodriguez in June 1962 in Juarez, Mexico. Emma and Merced moved to Monahans in 1981 to help care for her parents and raise her family in the United States.
She began cleaning hotels and then later worked at K-Bob’s Steakhouse for 13 years where she began her desire to cook. She always wanted to be her own boss, that is when she opened Emma’s Kitchen drive-through in 2007 and later achieved the dream of opening her own restaurant. Emma and Merced worked very hard to build and maintain their restaurant. They retired in 2010 but continued to help their daughter part time. She officially retired completely in 2020 and enjoyed her time gardening and spending time with family. She had a deep love for her children and family, selflessly giving love and care to her children and grandchildren. She enjoyed cooking, planting flowers, crocheting, traveling, and family time. Always reuniting her loved ones with meals that they loved.
