It is with deep sadness that we announce the passing of Kari J. (Peters) Apfelbeck, age 49, of Dayton, Ohio. Born to Jeffrey S. Peters and Pamela J. (Weeks) VanWinkle on November 21, 1976, in Dayton, Ohio. Kari passed away on Sunday, February 15, 2026.
Kari attended Northmont High School and did further schooling in Cosmetology. She worked as a hair stylist and loved working with color and style. She enjoyed painting, drawing, crafting, music and cooking.
Kari Jean is survived by her beloved sons, Elijah M. Apfelbeck and Joshua M. Gunsauley; her mother, Pamela J. VanWinkle; her aunts, Kathleen (Thomas) Scott and Shari (Richard) Scharrer; her uncle, John C. (Carol) Weeks Jr.; and her brothers, Brad (Laura) Peters and Blake Peters. She is also remembered fondly by numerous cousins, extended family and friends.
Kari was preceded in death by her father, Jeffrey Scott Peters; maternal grandparents, John C. and Thelma “Connie” (Lee) Weeks, Sr.; and paternal grandparents Robert and Jane (Etter) Peters.
It was Kari’s desire to be an organ donor, giving the gift of life and hope to others. She was surrounded by prayer, love, and respect during her final days and moments. The family wishes to thank the staff of Premier and Life Connections for their tender care and for honoring Kari with an Honor Walk comprised of staff, family and friends.
