Kenneth D. "Kenny" Adkins, 73, of St. Mary, passed away on August 21, 2025, at Gold Crest Retirement Center in Adams. He was born on June 15, 1952, in Lincoln, Nebraska, to James E. Sr. and Charlie May Adkins. Ken grew up in Lincoln and graduated from Lincoln High School. He attended the University of Nebraska–Lincoln, where he played football for the Cornhuskers. Ken owned and operated the Pony Express Bar & Grill in Douglas for many years and worked at the Tecumseh State Correctional Center. He loved spending time with his children and grandchildren and found great joy in cooking for his family and friends.
He is survived by his son, Derek (Nicole) Adkins of Hickman; daughter, Sonny (Jeremy) Wallace of Papillion; grandchildren, Jaxson and Alexa Adkins, Jayla, Jameer, and Samar Wallace; former wife, Kathy Adkins of Douglas; significant other, Lynn Marion of St. Mary; brother, James E. Adkins Jr. (Diana Jackson) of Lincoln; sister-in-law, Candy Houston of San Diego, California; as well as many nieces, nephews, and extended family. Ken was preceded in death by his parents; sisters, Patricia Legon and Ritia (Jerome) Adams; and brother, Carlos Houston.
In keeping with Ken's wishes, cremation has taken place and no formal services will be held. A register book will be available for signing on Tuesday, August 26, 2025, from noon until 8:00 p.m. with the family greeting relatives and friends from 5:00 P.M. until 7:00 P.M. at Fox Funeral Home in Adams. Private burial will be held at Douglas Cemetery.
