Victoria Lee (Anderson) Hickok died on Monday, November 10, 2025, at her home surrounded by her family. Funeral Services will be at 10AM on Saturday, November 15, 2025, at Our Saviour's Lutheran Church in Dannebrog, NE with Pastor Sheri Lodel officiating. Burial will follow in the Mount Pleasant Cemetery in Cairo, NE. Visitation will be on Friday from 5-7PM at the church. Apfel Funeral Home is assisting the family with arrangements; online condolences may be left at www.apfelfuneralhome.com.
Vikki was born on April 15, 1967, to Clayton James Anderson and Margaret Ann (Marcellus) (Anderson) Urbanec in Atkinson, NE. Vikki attended West Holt High School before studying Criminal Justice at Kearney State College. Senior year she transferred to UNL to be closer to Donn. She graduated in 1989.
August 31, 1991, Vikki married her best friend, Donn Kyle Hickok. Together they raised four children and two doodles over the next 30+ years. She was a dedicated mother, and could be seen at every sporting event, play, concert, and fundraiser for her kids.
Vikki worked at Principal Financial Group for over 25 years, was a member of Our Saviour's Lutheran Church, and participated in many community events. In 2008 she took a break from Principal when she and Donn opened their family restaurant Aces & Eights. She was an accomplished baker famous for her pies and cinnamon rolls.
In 2017 Vikki was diagnosed with breast cancer. After many long battles, she passed away in her home, surrounded by family, on November 10, 2025.
She is preceded in death by her grandparents Donald and Angela Marcellus and Chester and Dorothy Anderson.
She is survived by her parents Clayton Anderson and Margaret Urbanec, her siblings Anthony Anderson and Christina (Brock) Scott, her husband Donn Hickok, her children Emily (Cody) Hickok, Jacob Hickok, Paige Hickok, and Madison Hickok, and several aunts, uncles, cousins, nieces and nephews.
