Joseph Marcus "Marc" Parillo

BALSTON SPA – Joseph Marcus "Marc" Parillo of Ballston Spa passed away into eternal rest on Sunday, February 25, 2024 with his loving family by his side at Saratoga Hospital after a battle with Glioblastoma Brain Cancer. He was born September 23, 1949, to Ruth and Joseph Parillo in Saratoga Springs, NY.

Marc was a graduate of Saratoga Springs High School, Class of 1967, and studied for a year at UMass Amherst.

He married Cheryle A. Hartmann, also of Saratoga Springs, on August 3, 1968, and later worked in the Printing Department at General Foods, Saratoga Springs from 1968-1974.

In 1974, Marc began working full time at Parillo's Sausage Co. in Saratoga Springs – a company his father founded in 1951 – having worked informally with his father since the age of 10. In 1986, after the death of his father, Marc stepped in to co-manage the business with his mother, Ruth. In 2005, Marc and Cheryle officially became managing partners of Parillo's Sausage, and over the years grew the business into one of the most respected and admired sausage brands in Upstate New York. Marc was affectionately called "The Sausage King of Saratoga" by many customers, friends, and family.

Marc loved fishing on the Hudson with his daughter, nieces, and granddaughter, as well as spending summers with Cheryle, family, and friends on various lakes and rivers across the area.

He also enjoyed bowling and all kinds of team competition. His greatest joy was spending Saturdays with his granddaughter, Alexa at the barn where she trained with her horses. Sharing an incredibly special and unique relationship, he enjoyed supporting her as she competed in horse competitions across the region over the years.

Marc also loved music, playing guitar, singing, and dancing and would share his knowledge with anyone interested. He also shared this love with his granddaughter as she learned to sing and play various instruments. "Papa", as he was known to her, could always be found in the audience at her many concerts and recitals.

Marc was predeceased by his parents. He is survived by his wife, Cheryle Parillo of Ballston Spa; daughter, Marisa Rahman and her husband, Bernard of Galway; granddaughter, Alexa Rahman of Galway; sister, Carol Parillo of Schuylerville; sister, Mary-Jo Healey and her husband, Patrick of Saratoga; nieces: Sara Healey and Stephanie Healey, both of Saratoga; nieces: Terri Hartmann McDonald (Mark), Kim McAndrew (Brian), Andrea Hartmann (Mark) and Stacey Iadeluca; nephews: Joseph Patterson (Roberta), David Hartmann (Susan), Darrin Hartmann, and Robert Hartmann (Michelle); brother-in-law, Robert Hartmann (Donna) of Erie, PA; and sister-in-law, Marjorie Hartmann (William, deceased) of Saratoga. Although not blood relatives: Lisa Stover and her husband, Thomas of Wilton, and Ernie LaBounty of Saratoga, were considered family by Marc.

Relatives and friends may call from 4:00–7:00 p.m. Friday, March 1, 2024 at the William J. Burke & Sons/Bussing & Cunniff Funeral Homes, 628 North Broadway, Saratoga Springs (518-584-5373).

Funeral services will be at 11:00 a.m. Saturday, March 2, 2024 at the funeral home.

Burial will follow at the family plot in St. Peter's Cemetery, West Ave.

A gathering will take place following the burial from 1:00-4:00 p.m., at Abeel's Restaurant, 910 Rock City Rd., Ballston Spa, NY.

Flowers are welcome, or donations may be sent to the Glioblastoma Foundation where a fund has been established in Marc's name: https://fundraise.glioblastomafoundation.org/marcparillo-glioblastoma. Donations will fund the development of novel drug therapies for Glioblastoma.

The family wishes to express their many thanks and gratitude to the staff at Saratoga Hospital and on A3. They are forever grateful for the nurses, PCAs, and staff for the exceptional care shown to Marc and the entire family. They wish a special thank you to Marc's very own favorite nurses, Laurie Ruggerio and Shari Gemmett, for their constant care and friendship in his final days.

Sheryl,
Joey and I were saddened to hear of Joseph’s passing. We didn’t know Joseph that well. The last time we saw him was at The Class Reunion of 1967. My wife Johanna, (Joey) from Saratoga, knew the Patillo’s from the Sausage Company in Saratoga. We send our condolences to the entire family. We hope to meet him again in Paradise.

Condolences Sherry and family. My first memory of Mark. I was 10 years old collecting baseball cards. I needed one card to complete the whole set of 700. The player was Jack Meyer Phillies. Mark had card. I rode my bike at 10 years old from my house on George st up ludlow st. Thru Lake Ave to his house on Avery st to trade a bunch of my extra cards to get the Jack Meyer card to complete my set. I still have the card 64 years later. Memory. RIP Mark Parillo.

I was so very fortunate to spend several of my teenage years and early 20s as a regular fixture in the Parillo home where I experienced firsthand Marc’s generosity, warmth, love of laughter, and intelligence. I can remember and am eternally grateful for the many conversations that were welcoming, enlightening, and entertaining. Marc had a wealth of information regarding small-business ownership, practical mathematics and sciences, music, and life that he graciously taught me, always with remarkable patience and joy, unselfishly offered time and time again. He was a wonderful teacher, whether he was explaining how to unfreeze the brake on my car, compare interest rates, quickly determine the relative minor on the neck of his Fender Stratocaster, or how to handle a situation at work.

Yet his physicality was as distinctive of his mind, and it seems almost impossible to think of Marc without recalling his robust presence that was such a part of his persona during the times that I knew him well. His coordination, powerful muscular frame, and deep voice combined to exude the type of physical confidence that as a wimpy teenager I so desperately longed for and admired. And even with all this power, Marc was light-of-foot on the dance floor and athletically nimble.

But above all else, what I remember about Marc was his profound love and passion for his family. During Sunday dinners at his parents' house, his laughter and joking with his sisters and nieces resonated throughout the house and brought a smile to everyone’s face. It comes as no surprise that he had a special relationship with his granddaughter, for I witnessed the deeply thoughtful and loving relationship that he had with his wonderful daughter, Marisa, and his beautiful wife, Cheryl. His love for them was so present that it seemed almost palatable during every hour I was with them. Rest well my beautiful friend.

Marc was a constant in our weekly conversation when we ordered Sausage for Pizza Etc on both Geyser Road and our former location in Wilton. We first met him in 1986 and continued a working relationship until the end of 2023. We could always count on Marc and Parrillos Sausage to supply us with the best sausage around. We have missed talking to him since December and he will always have a special place with us at Pizza Etc.

There is no one to take your place, Marc so your throne will have to sit empty for a while! I’m sorry to have missed this past Christmas’ visit and a chance to stock our freezer. Our lasagna and sausage and peppers will never be the same.
