There was that one time as I sat in awe and watched Chef Albert lean in and carefully place a wheel of lotus root atop a tomato. I watched this architect's every move as he architected and built an artwork to be soon deconstructed by the hungry ones. I went to culinary school soon after inspired by Alex, Wolfgang and Ron. I still remember the impact and to this day, lean in, and construct.

Albert was a very good friend and I loved him like a brother. It is Sean Olmstead and I do not know if your remember me from the Flying Saucer. he was the most important figure in my career and
and my early days, no one can cook like he did

It was always unpredictable as to when you might call or just show up but it was always a welcome surprise.
Your ideas were creative and you shall be missed,you were quite the character.

Where to start? I was at CCA (Grad Dec 1986) and had the pleasure to be his commis when he was Demo chef in the upstairs kitchen as well his apprentice when he took over Garde Manger. There were some great chefs at school at the time (Sacchetto, Gerometta, Koellner, Frieberg) but without fail his food was the best tasting and best presented. I learned about respect for product and the profession. His humanity, humor and respect for tradition was always evident. I remember the Patricia Untermann review of Flying Saucer that relates his berating her profession for shutting down restaurants and careers. He still received a great review. Absolutely the best chef I have ever known and had the privilege of working with. Whenever I went to the Saucer, he always had time to smile and talk (even with the sweat dripping down his nose). Sad, sad news.
