CLARKS SUMMIT — Mary Ann Carroll, professor emeritus, of Clarks Summit, died peacefully Wednesday morning, Feb. 12, 2014, at Regional Hospital, Scranton. Her first husband was Joseph M. Butler Jr., who died in 1968; and she was later married to Eugene R. Carroll, who died in 2012.
Born in Scranton, she was a daughter of the late Thomas and Helen Berge Sheehan.
Prior to retirement, she was employed at Keystone College for many years, where she was the founder and coordinator of the hospitality management program. She always treated her students as one of her own children, touching the lives of each with her enthusiasm. She was a woman of dignity and grace and a perfect example of a mother. She held degrees from both the University of Scranton and Marywood College, and, as a dietician, taught nutrition as a senior professor at Northeastern Educational Intermediate Unit and as a teaching dietician at Mercy Hospital.
She was a member of the American Dietetic Association, served on the board of directors of the International Council on Hotel, Restaurant and Institutional Education and was a charter member of HEMAR, serving as the president from 1992 to 1993. She was an evaluation team member of Middle States Accreditation, a member of Pennsylvania Restaurant Association, the Northwestern Pennsylvania Restaurant Association and the American Culinary Federation.
Surviving are three sons, Michael and his wife, Mary Beth, Lafayette, Colo., Thomas and his partner, Jennifer Lansing, Boulder, Colo, Patrick and his wife, Analese, Louisville, Colo.; two daughters, Nancy Carroll Mercanti and her husband, John, Clarks Green, and Jean Ann Carroll, Clarks Summit, with whom she resided; six grandchildren, Sara Mercanti Lowe, Eliza Mercanti, Shane, Issac, Liam and Evan Carroll; a great-grandson, Carson; a brother, Thomas and his wife, Terry Sheehan; two sisters, Helen and Sylvia Sheehan; several nephews.
The family thanks Dr. Michael Gilhooley, Dr. Gregory Cali and the staff at the Regional Hospital for their care and compassion in caring for Mary Ann.
A Mass of Christian Burial was held at Our Lady of the Snows Church, 301 S. State St., Clarks Summit. Interment will be private at the convenience of the family in Cathedral Cemetery, Scranton.

To the Carroll family, Mary Ann was a beautiful person who helped me greatly as a student at Keystone and eventually as a friend with common values. I will cherish our conversations and the sound advice she gave me over the years.I can hear her wonderful laugh even as I write this. She was very special and I will miss her deeply. Mary Ann (Mrs. Carroll to me and my peers) had a profound impact on my life. She taught my first college classes and always modeled the type of professionalism and good behavior that my own Mother always knew I was capable of. It wasn't until years later that I realized her impact and took the time to reconnect and thank her for all she did. Today and forever more, I will continue to thank Mrs. Carroll for helping me be the best me possible.
