When I married a son of a cousin of Betsy's she made sure to welcome me and ask I call her Aunt Betsy. I will never forget her warmth and spark in those eyes when she found something particularly humorous. One time in particular, we laughed over my first attempt at southern biscuits that were very solid hockey pucks. She was so gracious when explaining the chemistry of southern cooking and ingredients versus my experience with midwestern and New England recipes. She will be missed, but well remembered.

I have so many fond memories of Betsy. She was such a staple at church and was always ready to help. I always love going to the farm and spending time with Betsy, George and Sallie. Betsy, I always wanted to be just like you when I grew up! Until we meet again.

A kind and gracious soul. Always quick with a laugh and memory to share. I will look forward to our next opportunity to reminisce again.

Betsy was such a beautiful soul and person who we will miss, especially when visiting the family farm. I have so many fond memories of Betsy, being fortunate to have many dinners with her and the family through out the years. She was always cheerful and kind and always had a smile on her face. I was also very blessed to see her often at church, giving so much of herself to her church family and community. Prayers to the family during this difficult time.

Betsy was like a second mother to me. She offered my family an offer we couldn't refuse! My children Sallie and I got to grow up on beautiful Horseshoe Farm! Betsy was smart, generous, and kind. We were all blessed having her in her lives. I became known as the "grass cutter" and enjoyed every minute of it. Everyone of my friends that met her wanted to grow up and be like Mema! Thank you Betsy! I miss you already! I love you!
