Mark S. Copeland
Mark S. Copeland, 63, of Coaldale, died on Wednesday, Feb 23, 2022, at St. Luke's Hospital Allentown Campus.
Born on Sunday, Feb. 15, 1959, in Somerville, N.J., he was a son of the late Daniel and Irene (Bassak) Copeland.
Surviving are his beloved wife of 16 years, Mary Ann (Frendak) Copeland; brothers, Robby Copeland, Danny Copeland and his wife, Pauline; sisters, Janet Arroyopabon, Pat McGlynn, Karen Walker and her companion, Larry Zemeny; and nieces and nephews.
Mark was a graduate of Hillsboro High School in New Jersey. He was a talented chef and worked for many fine restaurants in North Eastern Pennsylvania and Central New Jersey. However, he was most proud of his eight years spent at Larry Holmes's Ringside Restaurant in Easton, where he was the champ's personal chef. Most recently, Mark was employed part-time at Frank's Service Center in Lehighton.
Mark was an avid outdoorsman and looked forward to fishing excursions with his buddy, Lou. Obviously, Mark enjoyed cooking and barbecuing at home. He was a NASCAR fan, and stayed true to his New Jersey roots, supporting the New York Giants football team. Mark's dog Wheatsy was his constant companion.
Service: Private arrangements entrusted to the E. Franklin Griffiths Funeral Home & Cremation Services Inc., 655 E. Broad St., Tamaqua. Interment in Sky-View Memorial Park, Hometown.
