The Gaitan house was my second home during my highschool years. My heart goes out to the entire family. I am blessed to have known Gil, and also to have had the opportunity to share so many memories with the entire family. I love you all so much and I wish I could have made it into town to attend the services. You are in my thoughts and prayers every day.

To the Gaitan family -
My very first job, about the age of 15 (15 years ago now), was working in the kitchen of the Outing Lodge (in Stillwater) under Gil's direction. My friend and I both supported him by preparing food and assembling the plates for banquets, weddings, etc - I'll never forget cutting truckloads of lettuce, washing it, and then "spinning" it dry in the tiniest little contraption by the handful. It took forever! To this day, I remember it as the best job I ever had, as Gil made it so much fun - the jokes he used to crack, listening to his music, watching him prepare so much wonderful food with calm and ease. I learned so much from him, and to this day I still use his teachings (minor things that a 15 year old learns, like how to cut appropriately. He'd always tell me to keep my fingers bent so I didn't cut them off) - I even wish I could have learned from him as an adult, as much of my memories from back then are starting to disappear. For the last 15 years I've dreamed about the wonderful food he prepared - absolutely amazing! I remember how he used to speak of his wonderful family - I could tell he was a great father as he frequently talked about soapbox racing with his son (or something like that - it was 15 years ago). There isn't much that I can recall from 15 years ago, or any job I've had since then, so that just goes to show how special Gil was - he made a huge impact and impression on my life, and even though it's been 15 years since I last saw him, I will certainly miss him.
I am truly sorry for your loss, and wish you much comfort in those who surround you, and the memories that he has most certainly left with you.

I am very sorry for your loss. Gil was a great man who was well loved by many as a friend, mentor and instructor. He has touched the lives of so many people through his kindness and teachings. I will never forget his patience and care from when I worked for him at the Dock Cafe to when I worked with him as an instructor at Le Cordon Bleu.

Peter and I are so sorry to hear of Gil's passing. I know its been a long time, but you and Gil and family were favorite neighbors of ours at 1955 West Old Shakopee Road, Parkview Apartments back in the early 1980's.
Oddly enough, today, 2 young students of Gil's were doing work today for a gentleman that is renting a commercial lot from Peter. Both of them were expressing to Peter how much they were enjoying their culinary arts school and what a great, great teacher Gil was. Peter replied "Gil???" And they mentioned to us that he went to be with the Lord on Monday. God works in mysterious ways all right!!!
Eternal rest grant onto Gil Gaitan O Lord, and let perpetual light shine upon him. May he rest in peace Amen.

We were blessed to have known Chef. He was my husband's favorite instructor at the school and an integral part of shaping his cooking career. I'll always remember him inviting me (not even a student) to come by so he could teach my husband and I how to make gingerbread houses and sugar Easter eggs (on his days off). He genuinely loved cooking, creating art with food, and teaching. He was a special man and we will miss him dearly. Blessings to Chef's family...you're in our prayers.

I had Chef Gil for my Culinary 2 class. I will always remember his signature "Oh boy, oh boy" when he was about to eat something he was looking forward to. Great instructor and I learned a lot! I am still at school and it just seems strange there without him.
