Sister Eleanor A. Young

Sister Eleanor Anne Young, aged 82, entered into eternal life on July 13, 2007, at the Incarnate Word Retirement Community, San Antonio, Texas. She was born in Houston, TX to Carl and Eleanor (Hamilton) Young on October 8, 1925. Sister Eleanor Anne entered the Congregation of the Sisters of Charity of the Incarnate Word in 1946, professing her first vows in 1949 and perpetual vows in 1954. She obtained a Bachelor's Degree in Biology/Chemistry in 1947 from Incarnate Word College (now the University of the Incarnate Word or UIW) followed by a Master's Degree in Nutrition Education from St. Louis University in 1955 and a Ph.D. in Nutrition/Biochemistry/Physiology from the University of Wisconsin in 1968. She ministered as an instructor at St. Cecilia's School and as an Associate Professor for Incarnate Word College (now UIW) and the University of Texas Health Science Center in San Antonio, TX. Sister Eleanor Anne was among the foremost research scientists and educators in the field of nutrition whose work earned her entry into the Texas Women's Hall of Fame in 1993. In 1985, the nutrition program she developed for the University of Texas Health Science Center was cited by the National Academy of Science as a prototype of excellence for its creative nutrition curriculum. She served as a member of numerous government committees related to nutrition and health care, including the Technical Advisory Committee for the Texas Childhood Hunger Identification Project. She was the Texas Dietitian of the Year in 1982. Named to the San Antonio Women's Hall of Fame in 1984, she was also chosen as one of the San Antonio Express News' Ten Outstanding Women, while the San Antonio Light in 1987 named her Sunday's Woman of the Year. She also received the 1990 Outstanding Contribution to Nutrition Award from the Texas State Nutrition Council and was elected a fellow of the American Institute of Nutrition the following year. Sister Eleanor Anne is survived and dearly missed by her sister Cathy Dietz and husband Brian of Arlington, Robert Young of Houston, Carl Young and wife Delores of Corpus Christi, John Young and wife Sallie of Houston, by nieces and nephews and her Sisters in Christ. The Rosary is scheduled for Monday, July 16 at 6:30 P.M. in St. Joseph's Chapel on the 2nd Floor of Incarnate Word Retirement Community, 4707 Broadway. A Memorial Mass of Resurrection will be celebrated on July 17 at 11:00 A.M. Sister Eleanor Anne donated her body to science.
