Comfort Food With Spice
Jose Raymond Castro began cooking at age 9 in a little house on Rosedale Avenue in the Bronx. His mother liked yellow, so she had painted the kitchen bright yellow. She let him cook eggs first. Then came rice, beans, pork, seasoning, the works. Mr. Castro, 37, was fascinated with food.

He started working at 13, delivering food, preparing food, cooking in restaurants around the city. When the World Trade Center was attacked on Tuesday, he was working as a prep cook in a food court on the 101st floor of one of the towers, readying food for the chef.

He specialized in sophisticated food, said his sister, Maritza. "Because that's what people in Manhattan liked to eat." But at home in the South Bronx, he cooked for his family: pernil, rice with gandules, lasagna, ziti, rice pudding, honey-glazed turkey on Thanksgiving.

"They had a son three years ago," Ms. Castro said of her brother and his wife, Gladys. "Oh, that's the love of his life, and I do mean the love of his life. He looks just like him, too. He's light-skinned, dirty-blond hair, hazel eyes, skinny just like my brother."

Here it is 2020 and we all are watching nationwide as the Cornonavirus Pandemic is taking lives, and there in New York City, it is heart-breaking to see the lives that are being cut short. Once again, as when we lost you, Jose, the city of New York is helping to bond this nation together in love. We will never forget you and the other innocent lives lost on that day. I pause today to pray for your family as they continue to miss you, and your many friends who think of you often. Much love from Texas

I would like to share just a few words of my own with you and your family. Though you are not here physically you will always be here spiritually because it was not your time. Here are a few words from a song that I wrote a couple days after the trajedy and I am honored to be able to share them with you and your family:

Although we feel the pain we'll make it, We grow stronger.

For all eternity,

This day will always be remebered,

and all the lives we lost we will never forget.

We all shed tears now for losses so unecessary, they're ones our hearts will always carry, Always united no matter what our country is faced with we'll always be together sharing peace and love.



We'll make it through this, we will rebuild our nation that's what we've decided. We all stand strong that's why our states are called UNITED.

We go back many years and even though we werent close your death has made such an impact to us all. I see what a beautiful family you have and how deeply they love and miss you. Your family has endured more than their share of heartache in their lives, that's for sure. There is nothing I can say or do to explain why, maybe what seems a mystery hopefully in time we'll understand. Ray, may God bless you and keep you. As for your family and friends especially you Isa & Ina, Remember prayers are with you to give you strength. In life Ray was a gentleman. Who lived for his family and friends and I am honored to have been one of many. He loved his wife and son. Was very close to his sisters Isa and Ina, and his best friend Pete was like a brother. He was our practical joker, always quick with a hearty laugh. Whenever we saw that glint in his eyes we knew he was up to something! I am sure I speak for all his loved ones when I say we are thankful that we got to enjoy a big picnic in the begining of Sept, 2001 with Ray and his "BIG TENT"!! Rest in Peace Ray, we love you and miss and will NEVER forget you!
