There was that one time as I sat in awe and watched Chef Albert lean in and carefully place a wheel of lotus root atop a tomato. I watched this architect's every move as he architected and built an artwork to be soon deconstructed by the hungry ones. I went to culinary school soon after inspired by Alex, Wolfgang and Ron. I still remember the impact and to this day, lean in, and construct.

Albert was a very good friend and I loved him like a brother. It is Sean Olmstead and I do not know if your remember me from the Flying Saucer. I visited Albert in Thailand and saw him in SF last year.We have talked very often of the last couple of years. Please give me a call if you can at 415-425-7720.

I have often thought of Albert over the years and still make his Moroccan hot sauce (Out to Lunch). Thank you for the memories, Lilo. All that's left is to dip some bread and lift the glass.
