Edith L. Riach, a retired library assistant at Mount St. Mary's College in Newburgh, died Monday, June 4, 2007 at St. Luke's Hospital in Newburgh. She was 88. She was born to the late Paul and Margaret Madden Schmitz on December 18, 1918 in Brooklyn, N.Y. Edith married her beloved husband...
I still think of my Great Aunt Edith whenever I see a pizzelle or a lemon merengue pie with the merengue piled high and perfectly toasted...I think she did it in the oven. No blowtorch for Aunt Edith!

Aunt Edith made the best "old fashioned" desserts. Pizzelles dusted with powdered sugar, Lemon Merengue Pie, delicious Cream Puffs, etc.
And whenever we had a family cookout, I would always look forward to her macaroni salad. She made it with tuna fish. yum!
She was so precious. A sweet little lady indeed.
For the past several years, whenever we got together, she would give me or my mom an envelope with a handful of old pictures in it that we had never seen before....
