On December 20th or 21st, you would buy the bacala, soak it for three days, then boil it, saving the broth for soup. Clean it by hand off the bone, then make your bacala soup, salad, and sauteed. Then make the calamari sauce, followed by scungili salad, plus smelts. Then shrimp scampi with your secret ingredient and a nice glass of wine. I am sorry to hear of the passing of Mr. Lieggi may he Rest In Peace and my sincere condolences to his wife and family. I have so many wonderful memories of my beloved late husband and I regularly going to his restaurant as well as the Glendale and Don Young´s with several of our friends enjoying his excellent delicious meals and the good music and entertainment also.
