Reminiscing about my years in the Dallas restaurant world way back in the 70s and 80s prompted me to look up some of those who made a lasting impression on me. Franco was near the top of the list. I was so sorry to hear about dear Franco. over the years I have thought about you all often and only the other day found pictures of our happy times together. i am sure you all miss him terribly dear Franco really was one of life's special characters and those who had the privilege of knowing him are all the richer for it. I was but a novice when i was given a position as vegetable cook at the riviera, but i understood the opportunity that was given to me. i worked in a shrine to the restaurant profession. on a daily basis i was guided by one of the finest diplomats in all of customer relations. Franco could make the least ordinary of individuals feel like royalty and taught me the importance of putting the guest first in all situations.

I am glad Paul Low introduced me to Franco so many years ago at the Plaza of the Americas. I was treated so warmly on my infrequent visits to the restaurants - you would think I had been a frequent customer. I am glad to have known Franco and admire his work in the community.
