The world could needs more Fred Carlos. His rosy disposition is missed

It was with great sadness that I encountered Fred´s passing. I worked with Fred at Elephant´s Deli and knew him quite well. I would like to extend my condolences to the family. Please know that I will do everything to attend the memorial. In the meantime, Rest in Peace, Sweet Prince.

I have worked with a lot of people over the years, but Fred was the best!! Passionate, talented, fun and just so easy to collaborate with. We kept in touch over the years and it was pure joy to see him. I am so glad and fortunate to have him part of my life. He will be missed. Scott & Anne Weaver

Fred was one of a kind, funny, kind a lovely man

Amy and I met Fred at Portland Farmers Market about 20 years ago. When he wasn't flirting, Fred was talking about food or the Bills. We would meet at Nick's Back Room for pizza and MNF and he would dose his slice with the extra spicy chili oil and drink a Heater Allen. Fred was a great friend and we'll miss him.

Fred was such a great person. Always so nice and thoughtful! Will truly be missed by his loved ones and friends. Rest in peace.
