My first encounter with Chef was at Commander´s Palace in 1983. I was recently discharged from the Marine Corp and was supposed to meet up with a friend there. I quickly learned of the reputation and standing of that iconic restaurant and a friend suggested that I go apply as they were looking for two line cooks. Chef Brill was a wonderful friend, coworker and teacher He will always be well remember

Well I was just thinking about him and was looking for a picture. I was working at the resort as a busboy in Voyegers and with trying to figure out what I wanted to do with my life and going to school I was finally just overwhelmed by it all. I was scheduled to work that day but I called him in tears telling him I would no longer be able to work there. He told me to take the day off and come in early the next day. We talked in his office for three hours. He told me your going to figure it all...

I apprenticed under Chef Brill years ago and owe my unbelievably amazing career as a Chef to him. He was tough but taught me the right way and I know I wouldn't be where I am today if it wasn't for him taking a chance on me all those years ago, because he said "I see the fire in your eyes, come be my apprentice". I worked for Chef at Perdido Beach Resort and he taught me to never say " that's not my job". God bless Hazel and the family. He was a character and told us many funny stories in the break-room.

Wow, I just was looking for my Master chef and discovered he just passed away recently. He was my chef during my apprenticeship in New Orleans back in the mid Eighties.

He was extremely hard but I learned so much. He never called me by my name for 3 months, then after an awkward moment in the office on night, when I burst in exclaiming that I wanted to make cheesecake for him and he yelled at me and told me, "who am I to make his cheesecake!" My grandfather will forever live on in my heart and my familys hearts.

I apprenticed under Chef and will be forever grateful for those years. He was tough but encouraging. I will miss him as well. Many blessings to the family.
