To the family- When we needed a fundraiser for an Olympian from Waterford in the 90s Louise Appleby arranged a pancake dinner in the High School cafeteria. She also arranged for guest waiters. Her choices were all restaurantours, including Hughie. With proceeds and raffled items it was a success and Bethany made it to the Olympics in Sweden. RIP Hughie and Louise.

A great man and kind. I worked for Hughie he always made sure you were ok. I visited him at greentree nursing home several time and was impressed he remembered me. I miss him he will never be forgotten.
