Chef Lafont hired me straight out the CIA in Poughkeepsie NY in 1982. As a young graduate I was thrilled to work for him and Francois Soyez in Dallas. I was promoted and transferred to Destin Fl. at Les Saisons where Mark Cheffins was at the helm. When I became chef, chef La Font made trips to Destin to change seasonal menus with me. I still remember his Chicken Lyon de Lyon and Brie soup. RIP
