Paul was an integral part of my youth, and a fantastic family friend.. I rode my first horse on his property and spent many memorable moments with him. I will always remember his generous nature, great sense of humor and unquenchable work ethic. He will be greatly missed. RIP dear friend.

I grew up on the Simon ranch, My Dad (Bill Foukas) still lives on the Simon Ranch. Paul was so kind and Loving to myself and my siblings and remained very close to my brother (Larry) as my sister and I moved away in Our teens. Paul was like a father figure to us growing up and taught us kindness, respect, loyalty and work ethics. He was one of my Dad's best friends for over 50 years. Rest in peace sweet man.
