I recently searched for distinctive restaurant signs from places where I dined during my travels in Idaho. I learned of Paul´s untimely passing when I looked up Cucina Di Paolo. On October 19, 2019, I stopped for dinner. Paul said that he was closing, but that I could have a meal since he´d be there anyway while cleaning up. When I asked to use the restroom, he took me next door to a scooter rental shop and told me to lock up when I was done. Since I was the last diner in the restaurant, my plan was to eat quickly and leave although I felt that Paul would have allowed me to stay as long as necessary to finish my meal. As a result, I burned my tongue and regret doing so as the meal tasted great, even with a burned tongue. From the repartee in the kitchen, I concluded that Paul was working with his wife. I heard Paul state that the restaurant had record business that day. I could see why as the food was as good as the hospitality and vice versa. My condolences to Paul´s family.

I visited Cucina de Paulo every time I was in Boise. Paul gave me his personal cell number so that next time I visited, I could phone ahead and he could put some chicken pesto meatballs in the freezer for me to take on the long drive home. I will sincerely miss visiting Paul.

Saddened and shocked to read of the passing of such a great guy! Many discussions while making food for me and the other 10 people waiting in line over the years. He will be so missed by so many. Mary Jean and Family- we love you all:)

Paul will be missed. We remember when you were in the small drive in on the Bench and catered a wedding event for Tony's daughter in our home 20+ years ago. It was beautifully done. Paul was an absolutely wonderful individual who left us way too soon. Both Paul and Mary Jean made you feel like you were family even if you had just met them.

I’m so sorry for your loss Jeanie, you two were so good together and cooking was fabulous at Rick’s and at LaCuchina. The best Italian food ever. Paul even let me bring my own baking dish and he would fill it up with careful instructions on how to do the baking. You both made everyone feel special.

What a beautiful message to honor an amazing person. He was a mentor, a great friend and heck of an amazing chef. I always said there was literally nothing I could do better than him as even a piece of toast from him tasted like heaven. I used to show up to that kitchen during and even after I finished my internship from culinary school with him and just sit down. He would then just give me anything to eat and regardless what it was it was always out of this world. I never left hungry nor without food from spending no more that 10 minutes in their presence, and one thing was for sure, his talent was making people happy, specially his amazing wife Mary Jean. Will always be there for you Mary Jean and all of your family!

Paul was a great influence on how I work and and carry myself. He was an amazing chef and taught me lots of things that I use today in both my personal and professional life.
