Mikki Elisa Baxter of Lincoln, NE died on Wednesday, January 15, 2025, at Bryan West Medical Center in Lincoln, NE. Funeral Services will be 10:30 A.M. Tuesday, January 21, 2025, at Apfel Funeral Home in Grand Island with Derek Apfel officiating. Visitation will be an hour prior to the start of the service. A private family burial will take place in the Kearney Cemetery. Memorials are suggested to the Special Olympics. Apfel Funeral Home is assisting the family with arrangements, online condolences may be left at www.apfelfuneralhome.com
She was born on February 10, 1970, in Kearney, NE to Dudley Baxter and Gail (Geist) Robinson. Mikki grew up in Kearney and eventually lived in Grand Island, York, and Lincoln. She worked at GoodWill in Grand Island as well as attended day service programs in Grand Island, York, and Lincoln.
Mikki participated in 4H and the Special Olympics. She loved her Beach Boys and Home Alone movies. She enjoyed putting together puzzles and organizing her dolls and clothes.
She is survived by her father, Dudley Baxter; mother, Gail Robinson; sister, Michelle (Oscar) Sarafian; brother, Michael (Michele) Baxter; niece, Mandy (Spencer) Hinrichs; nephew, Dillon Baxter; and great niece, Brynn Hinrichs.
