Enrique Cortez, beloved husband, father, son, and brother, suffered a heart attack and unexpectedly passed away on Jan. 15, 2024, at the age of 56 in Quarry Bay, Hong Kong. He was born on Jan. 14, 1968, in El Paso, Texas, to Isabel and the late Luis Fernando Cortez.

Enrique, known to his friends and loved ones as Henry, was a quick-witted and funny individual with a unique perspective on life. He was acutely aware of the immensity and variability of the world, and valued expanding horizons for himself and his family. He had a knack for noticing the finer details in art, film, food, and people - otherwise known as an obsessive attention to detail - and always offered incisive observations with a twist. Despite his outgoing nature, he cherished his privacy and was the epitome of an extroverted introvert. He enjoyed staying in the know with technological advancements and pursued numerous hobbies and interests that helped him connect with others, all over the world.

Above all, Henry's commitment to his family knew no bounds. He was always there when his loved ones needed him, providing unwavering support and care. His devotion was unmatched, and they were lucky to have had him in their lives.

Henry is survived by his loving wife, Michelle Fay Cortez; his children, Elizabeth Cortez Gillard and her husband Ben Gillard, Daniel Cortez and his fiancée Emma Blomquist, Sarah Cortez, and man's best friend Oliver; his mother, Isabel Cortez; his brother, Fernando Cortez and sister-in-law, Edith Cortez; his sister, Teresa Cortez; his brother, Alex Cortez and sister-in-law, Lindsey Spencer. He was preceded in death by his father, Luis Fernando Cortez.

Henry attended schools all over the US as his family moved often during his childhood, ending his secondary education at Coronado High School in El Paso, Texas. He furthered his studies by earning a culinary degree at Johnson & Wales University in Providence, Rhode Island, and a food science degree at Cornell University in Ithaca, New York – which *is* an Ivy League school, as he was apt to remind with a lighthearted smirk.

Henry excelled in the culinary world, leaving a lasting impact. He worked at many notable establishments, with a special nod to The Old Brogue Irish Pub in Great Falls, VA. He was a chef at L'Auberge Chez Francois in Great Falls, where he survived the Escoffier-style French brigade. Later, he became the executive chef at J.R.'s Stockyards Inn in McLean, VA, with restaurant, catering and corporate event services that would handle thousands of people at a time. Henry also served as an executive chef at Capitol Catering in Washington, DC, one of the largest catering companies in the nation's capital, where inaugural balls, races in horse country and Congressional fundraising events kept him running nights and weekends. His culinary creations were featured in the Washington Post. In his later years, he embraced the role of Senior Food Scientist at General Mills in Minneapolis, MN. In this "second career," he created iconic products such as Philly Cheesesteak Hamburger Helper and Progresso's Traditional Italian Style Wedding and Chicken Cheese Enchilada soups, among others.

Outside of his professional endeavors, Henry enjoyed a number of varied hobbies. He was always willing to lend a helping hand, to craft a spice mix or replace a broken light. He spent weeks in New Orleans following Hurricane Katrina cooking for the first responders. He was active in a prison ministry. He found joy in woodworking, antique vehicle restoration, and was an avid fan of the Dallas Cowboys. He would have loved that this obituary started with an AI interface, as his passion for technology led him to be an early adopter of new gadgets and innovations. In his free time, he could often be found engrossed on the internet, researching real estate, technology and sundry other issues of the day.

In life, Henry found solace and spiritual nourishment at St. Joseph the Worker in Maple Grove, MN. This parish will host a funeral service to honor Henry's life on Monday, January 29th. Visitation will begin at 10 am, followed by a funeral mass at 11 am. A lunch reception and an opportunity to share cherished memories will follow the service.

Henry Cortez will be deeply missed by his family, friends, and all those who had the privilege of knowing him. His legacy of love, humor, and dedication will forever remain in their hearts.

We were blessed he was ours and we are honored to have shared him with you.

I am very sad to hear of Henry's passing. Henry and I were roommates at Johnson and Wales. He bought my beat up very late model Toyota Carola, it was his challenge. After we graduated we worked to together at the Silo Restaurant together, it was owned by the same family that owed the ole brogue, I moved to Texas we lost touch, I was just thinking about him and googled him and found his obit, Rest in peace my friend

Henry and I worked at GMI together. I have great memories of chatting with him about lots of topics that were generally not associated with our jobs as food scientists in a big corporation. Most of the folks we worked with had the same resume so his diverse background and culinary experiences made him way more interesting than most to chat about anything.

One poignant memory I have is an off-site where we took busses to Le Sueur to visit the Green Giant R&D lab. Around lunch, a bunch of guys ended up playing touch football in a park. It was 4th down at the goalline and I was the QB and I told the huddle, I'm going to throw it at someone really hard so be ready to catch it. Henry was open and I gunned it a very short distance and he caught it for the winning TD. He was reliable.

I move onto CPW (Int'l breakfast cereal) and a couple years later Michelle got an opportunity to expat in London. Henry got to be the trailing spouse and able to maintain his employment status transferring to CPW in Welwyn Garden City. Given his eclectic food background, he wasn't particularly passionate about breakfast cereal, but he figured it's a job and better than the alternative. We chatted throughout this transition and he was always quick with a witty observation about the corporate culture, ancient building or cast of characters there.

Since 2017 or so, we both moved on and lost touch, but my memories are fond. I send the family my deepest condolences and wanted to leave my note to let y'all know that he made an impact in the world and on me.

I´ll never forget the time, back when I was in 8th or 9th grade, when Henry told me that he wanted to invent the next "secret sauce" one day. We both laughed for a moment. Then he deadpanned: "No, bro, I´m serious." And you know what? He did just that - and more! Later in life he expressed how fulfilling it was to feed others and see them enjoy the food he helped create. And that´s just the thing, you know? Seeing the joy and fulfillment in others in something he gave...

I´m going to miss you, Kiki. My sincerest and heartfelt condolences to Michelle, Elizabeth, Daniel & Sarah. Cheers to a man that understood that the secret ingredient for life is the love that you give, the fulfillment that love provides and impact it can make!

Henry and I and a couple of our friends went fishing several times. Some of the fishing spots were a bit remote so you had to traverse a bit of jungle. Henry was walking near me and his head was on a swivel and I asked him why he was so anxious. He told me he was extremely afraid of snakes. So there were of course many jokes along the route. One of our friends is an Ex British soldier and retired Hong Kong Police Officer, and the other is an Italian Heavy Metal Bass guitarist, who did not always get all the jokes in English. The places we had to go through were actually full of snakes but we never "actually" saw any. I think making all the jokes made Henry put his fear aside and power through the jungle. I am going to miss fishing, exploring restaurants, looking for the perfect chocolate cookie, and talking about every thing under the sun with Henry.

Although we only recently had the pleasure of meeting and spending time with Henry we recognized immediately as an Old Soul. He was the type of person you connected to immediately, if you were sincere and open to it. We especially looked forward to being in-laws as our daughter Emma marries his son Daniel next year. And although that is now changed, we know he will be guiding from above and his love and influence will be a source of strength throughout their lives.

To Michelle and to their children we offer our sincerest love and wishes for comfort from the knowledge that this wonderful man loved you all fiercely, unwaveringly, and he is with you always.
