Lee (aka "Lulu") passed away peacefully at the age of 78 on August 12th, 2022. She lived a life packed full of laughter, family, friends, entertaining, good food, travel, and adventure. Her mottos were "Don't be afraid to take risks" and "It's okay to f* up." Colorful words from a colorful woman.

Lee's father was in the Army Air Corps and the numerous family moves helped develop her skills as an extrovert; never shy to meet new people and charm them with her bright smile, big green eyes, and infectious laugh. She lived in four states (IL, MD, FL, TX), three countries (U.S.A, England, Wales), one U.S. territory (Guam), and attended fifteen schools all before college.

While in high school, Lee met the love of her life and fellow military brat, Doug, while both fathers were stationed in Guam. A romance ensued, and eventually they both attended the University of Florida together, marrying in 1963.

Three more moves and three babies later, Lee's life took a new twist. In 1972, her husband's job transferred to Paris, France, marking a significant plot point in her life and where she felt "unfettered and alive." (Joni Mitchell's "A Free Man in Paris" was one of her favorite songs.) Lee followed an awakened food passion and enrolled in cooking classes at Le Cordon Bleu, graduating in 1976. Her experience living overseas and traveling across Europe, absorbing all the wonderful sights, sounds, food, and wine-forever changed her.

Lee and family returned to the U.S. in the summer of '76 and laid roots in Glen Ellyn, Illinois. In 1980, she became co-owner of a little shop called Spice 'n Easy, and helped turn a bulk coffee, tea, and spice store into a cafe serving espresso-based drinks, French pastries, and gourmet retail food. The business grew, moved locations, and in 1986, Lee became the sole owner of Spice, which served real food made from scratch. The business drew lines down the block for first dibs at bodacious cinnamon rolls, chocolate banana muffins, exquisitely decorated cakes, cookies, hashbrown potato salad, chicken salad sandwiches, a good cup of coffee, and counter chatter with the regulars. Spice was a true labor of love and an outlet for Lee's never-ending creativity. She sold her business after seventeen years and later moved with her husband to Redmond, Washington, to be closer to family.

Lee was a true adventurer and risk taker. She traveled to all seven continents (yes, including Antarctica) and twenty-five different countries, with Kenya and Tanzania as standouts. She was an avid gardener and loved "editing" her own garden or anyone else's who took the bait, deleting and moving plants around until they found their perfect spot. And she loved entertaining friends and family with festive parties, her favorite celebration being Bastille Day.

Lee loved a good dumpling, farmer's market corn and tomatoes, and oatmeal with lots of milk. She drank beer in very small glasses. She liked to order appetizers for her entree. Lee's special skills included hula dancing, memorizing poetry, and making legendary pancakes, bundt cakes, chocolate marshmallow cookies, and cheese fondue for her grandchildren.

Lee is preceded in death by her husband Doug, and eldest son, David. She is survived by her three brothers, her daughter Kelly (Greg), her son Doug, and grandchildren Daisy, Clementine, Nolan, and Roan.

A private celebration of Lee's life will be held at a future date. If you wish to memorialize Lee, the family welcomes planting or rearranging something in your yard or raising a glass of champagne to toast a life well lived.

What a wonderful obituary.

We met Lee and Doug when they moved to Florida and lived in the same house we did. Several years later we moved to Silver Spring Maryland and they moved to Virginia. We were still in touch and visited. Later we were transferred to Europe and they came along to Paris. We visited there and they came to Holland where you children stayed with us while they traveled. I don't remember much of what we did except visit a fairy tale village in our town of Valkenburg. We do remember them fondly.

I met Lee and Tom playing pickleball and knew immediately these were people I wanted to have as friends. I had the pleasure of sharing a few meals with them and there was always good food and laughter involved. Lee was such a kind, bright spirit who led an amazing life and brought joy to so many people. I was so sad to hear of her passing. My condolences to Tom and to Lee´s family. May the sweet memories of her bring you peace.

Growing up in Glen Ellyn, a high school job was something either you lived through or it helped form you. Mine was the latter at Spice n easy. The place was that magical, that it wasn´t just a job, it was an event, and that was Lee. It was a place that attracted people to work there you wanted to know, that was Lee. It attracted customers you might want to be one day (as someone in high school--for those who know--FOX), that was Lee. Lee was not just a boss, she was a kind of mentor that eschewed the title. She told me after so many years of letting me come home from travels, internships, college, to work in between all those things, that this time I was probably moving on, ` you won´t just live to make a living, you´ll do something that is not a waste of time´ (or something to that effect-, lol). At the time I took it as a challenge rather than something assuredly inevitable. But that was Lee. She was sharpe, exciting, challenging, fun and an inspiring woman to have had in my life at an early age. The spice n´easy soundtrack includes a `Free man in Paris´, and as I think of Lee & appreciate her, & all of her beautiful & loving family who now mourns their loss, I will try to stay in the light of her memory-- unfettered & alive. RIP Lee. Thank you.

Although I met Lee only briefly later in her life, her vibrance shone through in the stories of her remarkable life that Kelly shared over the years, often over large glasses of beer and good food. I see Lee's vibrance in you, Kelly. I hope you and your family can find self compassion for yourselves. And when you want to cry, I'll cry with you.

I don't know if Lee was actually the person who introduced me to brie and French cigarettes, but in my mind she is. I'll remember her warmth snd her smile. And I'll remember the permission she gave to all us restless G.E. kids to dream of bigger possibilities in a bigger world. My love to all the Chalfants. RIP Lee.
