I cherish the childhood memories of time spent at Aunt Emma's and Uncle Albert's home. What a warm, loving feeling I had whenever we visited!
I continue to make Aunt Emma's Pineapple Upside Down Cake, a recipe our Mom (Aunt Betty) shared with me. The sisters and sister-in-laws all shared a love of family and baking was an expression of their love. A mother's love is unconditional, beautiful and forever.
Rest in peace Aunt Emma.

We remember Aunt Emma for lots of things: her warmth, her smile, her lovingness, and, most of all, her baking. In her honor, here's Aunt Emma's Famous Chocolate Cake: 2 c flour, 2 c sugar, 3/4c cocoa, 2 t. baking soda, 1 t. baking powder, 1 t. salt, 1/2 c. oil, 1 t. vanilla, 1 c. milk. Beat 2 min. Add 2 eggs. Beat 2 min. Add 1 c. hot coffee. Beat 1 min. Bake @ 350 for 25 min. Ice with your choice of white or chocolate. Pure heaven. Aunt Emma gave us heaven on earth!
