ELIZABETH "BETTY" L. EINCK Elizabeth "Betty" L. Einck, 91 of Redwood Falls passed away on Thursday, May 25, 2023, at Gil-Mor Manor Nursing Home in Morgan. Mass of Christian Burial was held at 11 a.m. on Wednesday, May 31, 2023, at St. Catherine's Catholic Church in Redwood Falls with burial following in St. Leo's Catholic Cemetery in Pipestone. Visitation was held 4:30 until 8 p.m. with a prayer service at 4 p.m. on Tuesday May 30, 2023, all at Nelson-Hillestad Funeral Home in Redwood Falls. Visitation continued 10 until 11 a.m. Wednesday, May 31, 2023, at St. Catherine's Catholic Church. Nelson-Hillestad Funeral and Cremation Service of Morgan and Redwood Falls were in charge of the arrangements. E-mail condolences may be sent via www.nelson-hillestad.com. Betty was born on June 30, 1931, in Dell Rapids, S.D. and was the daughter of Ernest Sr. and Christina (VanDam) Meyer. She graduated from Pipestone High School in 1949 and attended Lamberton Teachers College in 1950. Betty married Merle Einck on April 14, 1952, at St. Leo's Catholic Church in Pipestone. Betty had a successful career. She taught for two years at District 15 in Pipestone before working for Armour Produce and Lange's Cafe Bakery, also located in Pipestone. For almost two decades she worked at MPI/Zytec/Artysen in Redwood Falls and retired in October of 1998. In her personal life, Betty enjoyed gardening, sewing and scrapbooking. She was a proud member of St. Catherine's Catholic Church and CCW. She also taught Catechism for several years. Betty is survived by her children: Ruth Smith of Victoria; Karla (John) Whipple of Pipestone; Dan (Janet) Einck of Slayton; Jerry Einck of Mexia, Texas; Lori (Thomas) DeSchepper, also of Pipestone; Jean (Michael) Miller of Brandon, S.D.; Dallas (Connie) Einck; Joan (Jeffrey) Schmidt; and Leon (Cindy) Einck all from Redwood Falls; 26 grandchildren, 35 great-grandchildren and five great-great-grandchildren. She is preceded in death by her husband Merle who passed on January 2, 2005; sisters Mary Ann (Leonard) Steele, Darlene (Bernard) Ford, Ardis (Loren) Veen; brothers Nicholas Meyer, Edward Meyer, Clarence (Jackie) Meyer, Ernest Jr. (Darlene) Meyer; as well as her brother-in-law Dale (Darlene) Einck; son-in-law, Joe Smith, one grandson, Joshua Einck, and one great-granddaughter, Harmonie Einck.
