Ethel Jane McCoy, 81, of Science Hill, Kentucky passed away on Thursday, January 16, 2026 at the Lake Cumberland Regional Hospital.
Ethel was born on October 31, 1944 to the late Stanley & Lucielle Hellard in Fayette County, Kentucky. She loved spending her time in the kitchen cooking for family and friends. Ethel also enjoyed sewing, crocheting, and quilting, and took pride in everything she made. Those simple moments and handmade keepsakes were a big part of who she was and will be fondly remembered.
She is survived by her son, Ralph & (Sallie) McCoy Jr.; seven grandchildren, Joseph & (Sarah Dishman) McCoy, Jesse McCoy, Stanley McCoy, Rusty Hendricks, Corkey Hendricks, Lee & (Ashley) Haste, and Felicia Haste; twelve great-grandchildren and one great-great-grandchild.
In addition to her parents, she was also preceded in death by her husband, Ralph McCoy; and her daughters, Rhonda McCoy and Brenda Haste.
Private services will be held for Ethel McCoy.
