Eunice Marshall passed away peacefully on April 13, 2025, at the age of 88 in her home. Born on March 2, 1937, Eunice spent her life dedicated to her family and her faith. Eunice was a strong and creative woman, known for her kindness and sense of humor. She was not only a talented cook and baker, but also an avid collector of antiques and unique art. She was a gifted poet and author, writing beautifully sad songs and poems. She loved to take road trips and enjoyed bluegrass and gospel music. She made thousands of pones of cornbread and the world's best soup beans. Her deviled eggs are legendary along with her peanut butter fudge. She started every morning with a hot cup of Folgers coffee and a honey bun. She taught us the importance of a perfectly ripe tomato sandwich while sitting at her kitchen table. She taught us the beauty in things that were different and that love is our greatest strength. Her dedication to her family was her most admirable quality. She truly was the absolute best Mother and Mamaw.

Eunice was a loving wife to her late husband, Dal Marshall, and a devoted mother to her beloved children Jerry Simpson, Angela Koury and D.L. Marshall. She was preceded in death by her son Jerry, son in law Danny Koury, and her loving grandson Jesse Koury. Her legacy continues through her grandchildren Jerica Simpson, married to Aaron Gibson, and their son Henry (who she spoiled rotten), and Sara Bridges with her daughter Rachel (who she adored).

She was a jewel, and we were blessed to love her.

A small private ceremony will be held for family to honor Eunice's life and legacy. Though she will be profoundly missed, we find comfort knowing she is with her lord and so many others we love and miss.
