She was born on July 19, 1927 in Whitesville MO to her parents Henry and Alma Jackson. Eva was the youngest of their 10 children. She attended a one room school in Whitesville. They had three children, Martha, John, and Cindy. Upon moving to Kansas City, Eva became a homemaker.

She loved to sew and do crafts. Even sewing for some of their children's school teachers, and sewing Martha's wedding dress. She also loved to cook and have big family dinners.

Eva helped with Cub Scouts, Girl Scouts, and attended a multitude of Glee Cub and Band Concerts, and what seemed like endless piano recitals.
