Evie worked as a Manager for Lighthouse Christian Bookstore in Orange, Ca and previously worked as the Registrar at Camp of the Woods in Speculator, NY and Mission Aviation Fellowship in North Carolina,
Evelyn is survived by her cousins in the USA, Arnold Oftedal of Point Pleasant Boro, NJ, Kristine Oftedal of Brooklyn, NY and Donna Marie (Undem) Powers of Brooklyn, NY; and several cousins from both sides of her family in Norway.
In addition to her parents, she was predeceased by her sister, Edith Janet Olsen in 2017.
A Memorial Service will be held on Saturday, November 18, 2023, at 3PM at the Fishkill Baptist Church, 107 Route 82, Fishkill, NY. A reception will follow at the church. Please visit Evie's Book of Memories at www.mchoulfuneralhome.com.
Donations in Evelyn's memory may be made to the Billy Graham Evangelistic Association or Wycliffe Bible Translators.

I CAN STILL REMEMBER MY BIRTHDAY, AUGUST 5, 2023 WHEN EVELYN, SUSAN LEWIS, AND I HAD LUNCH AT PERKINS RESTAURANT IN WAPPINGERS FALLS, NY. WHEN THE BILL CAME FOR THE LUNCH WE ALL ENJOYED, AN ANGEL OF A PERSON MUST HAVE OVERHEARD THAT WE WERE CELEBRATING A BIRTHDAY. AND THE ENTIRE BILL WAS PAID IN FULL!!! WHAT A SURPRISE TO ALL OF US.
THEN MY HUSBAND, THOMAS H. BEIGHLEY GOT HIS NIECE LINDA DIDONATO TO BUY SIX BEAUTIFUL RED ROSES FOR ME. WHEN WE RETURNED FROM LUNCH, THE RED ROSES WERE OUTSIDE MY APARTMENT DOOR. I GAVE THEM TO EVELYN AS I AM ALLERGIC TO FLOWERS. EVELYN AND I SHARED THE BEAUTIFUL RED ROSES, AND SHE REALLY APPRECIATED THEM TOO. SHE WAS MY DRIVER TO FISHKILL BAPTIST CHURCH EACH SUNDAY...HOW I WILL MISS THOSE CONVERSATIONS....EVELYN HAS TRULY EARNED HER "WINGS IN HEAVEN". WHAT A BLESSING IT WAS TO KNOW HER! REST IN PEACE...WE ALL MISS YOU AT LEXINGTON CLUB AT GALLERIA...PATTY & TOMMY BEIGHLEY
