Jacky Louis Paul Burette

Jacky Louis Paul Burette, 83, of Fernandina Beach passed away Monday, July 29, 2024 at Fernandina Beach Rehabilitation and Nursing.
He was born in Gy Les Nonains, France and was the son of the late Roland and Simone Dussaule Burette. He served in the French military and attended Culinary School in Paris. He and his family moved to the United States in 1970, settling in Chicago.
Living in Chicago he worked for the Davres Corporation. While with that company he travelled extensively around the country supervising the opening of mutlitple restaurants. His culinary career eventually led him to Amelia Island in 1980 where he became Executive Chef for the developing Amelia Island Plantation.
As Executive Chef for the Plantation he oversaw the development of much of todays foodservice infrastructure that exists today at Omni Amelia Island Plantation. His work was his much of his life. He was active in an organization of Resort Executive Chefs whose meetings took him to many of the world's nicest resorts where he was able to network with Executive Chefs from around the world.
Mr. Burette would retire from full-time work after serving as Executive Chef at the Plantation for 39 years. He continued to work on a part-time basis until his health prevented him from doing so. He is remembered for his heavy French accent and how his style of saying "Hey Guy!" to people he knew and worked with.
Mr. Burette was a member of St. Michael Catholic Church. While work was much of his life, he enjoyed travelling with his family. Over the years they visited many parts of the globe including much of the Mediterranean and Thailand. He also enjoyed playing golf, working in his yard and snow skiing, which he continued to do until he was 75 years old.
Mr. Burette leaves behind his wife of 59 years, Ginette Burette of Fernandina Beach and his daughter, Sandrine Burette of Orlando.
A Mass to remember and celebrate his life will be held at 11:00 AM on Thursday, August 29, 2024 at St. Michael Catholic Church.
