Jose Vallejo, affectionately known as "Taco," passed away peacefully on November 11, 2025, at the age of 78 in Dallas, Texas. Born in Zapata, Texas, on October 7, 1947, Jose lived a life full of warmth, humor, and unmistakable charm.
Jose found joy in the simple pleasures - tending to his yard, sipping coffee and Coca-Cola (never water), and browsing the aisles of Home Depot. In his younger days, he loved fishing and had a deep passion for Tejano music, often strumming his guitar and singing with heart. He had a special fondness for lowrider cars and could spend hours admiring their artistry.
Known for his love of tacos and menudo, Jose earned his nickname "Taco" with pride. He was a devoted fan of novelas and movies, especially comedies featuring the Wayans Brothers like White Chicks and Little Man. When family gathered to watch emotional films, he'd gently remind them, "You don't have to cry," a phrase that now echoes with love and laughter.
Jose is survived by his beloved wife, Glafira Sylvia Vallejo, with whom he shared many beautiful years of marriage. He leaves behind his children: George Salmeron and wife Michelle, Jose H. Salmeron, Jeanette Mata and husband Roberto, Veronica Salmeron, Monica Vallejo, his siblings Margarito Vallejo, and Arnold Vallejo, Cecilia and Angie; and his cherished grandchildren: Erika Garcia, John Salmeron, Alianna Mata, Emmanuel Salmeron, and Ellie Mata. He also leaves behind many loving nieces and nephews who will carry his memory forward.
He was preceded in death by his parents, Hilario Vallejo and Santos Rosales, his loving siblings, and his grandparents.
Jose's legacy is one of laughter, love, and a life lived with heart. He will be deeply missed and fondly remembered by all who knew him.
