Joshua Aaron Dilley passed away on Oct. 11, 2025, at 51. He was the son of Jerry and Judith

Dilley. He was loved dearly by his family and friends. He always made people laugh. Josh was born on Oct. 8, 1974, in Fairbanks, Alaska.

He attended Plattsburgh Middle School and Plattsburgh High School, then worked at the Red Lobster restaurant in Plattsburgh until it closed. The stars aligned, and the owner of Anthony's restaurant, looking for new employees, hired Josh on the spot. He was a chef there for close to three decades. If you have visited Anthony's and enjoyed your ice cream, you are likely familiar with some of his work. In high school, he often cooked for his friends. His early music days began in the middle school orchestra, where he played the violin. In high school, he taught himself how to play the electric guitar and was an enormous music enthusiast. He was a faithful trail bike rider and a lover of cats, always having two males, whom he affectionately called "his boys." Orangey and Jasper will miss him very much. Josh will be missed by many. He raised his son by himself. Both he and Riley were and are exceptional young men. Very few men have the empathy and caring attitude of either.

Joshua Aaron Dilley is survived by: his son, Riley James Dilley; his parents, Jerry and Judith;

and his sister, Jessica Dilley.

A Celebration of Life to honor Josh, will be held on Saturday, November 1, 2025 from 12:00pm to 2:00pm at Anthony's Restaurant & Bistro in Plattsburgh.

Donations in his memory may be made to Elmore SPCA, P.O. Box 686 Peru, NY 12972.

This is shocking. I just hugged you and said we all need to stop getting together at funerals. As long as I've known you, you have always been such a wonderful, kind and loving soul. You were an amazing father to your son and your cats. You were such a funny person, always making everyone laugh. I rarely ever saw you without a smile on your face. You will truly be missed by so many. This world will not be the same without your presence. Rest peacefully Dee-oh-lay.

Josh was one of my oldest friends, since meeting each other while out skating. We were 13 or 14 and he had on a Misfits shirt,I knew right then we'd get along and become great friends. We were always making each other laugh doing the dumbest things, we'd skate together all summer and into the winter. Then snowboard in the winter till spring and skate. We were always showing and telling each other about new bands we'd find. I miss you brother and love you...Rest easy Dilley.

I'm so incredibly sorry to hear of Josh's passing. I first met him at Red Lobster, back in the early 90's. Josh used to sneak some deep fried scallops to me during our shift. He was such a gentleman and used to walk me home after work when it was dark to help keep me safe. He was a great friend. Years later we became neighbors when Riley was a little guy. Then again years later we became neighbors again. I had the pleasure of taking Riley's senior portraits. Josh was funny, and talented. He will be sorely missed.
